Meal Plans

I wanted to feature a page on my blog that was just meal plans for Chris and I. I loathe grocery shopping and planning. I feel like I run out of ideas and I don’t want to repeat recipes all the time! Plus… when I try new recipes, sometimes they don’t satisfy either of us. You can probably relate! So I will update this page each time I plan meals so hopefully it’ll help you 🙂 *I try to meal plan and buy for 2 weeks at a time… still working on ironing out the logistics. I’m still getting used to both of us currently working from home*

8/30 Plan

  • Garlic Salmon w/ grilled asparagus (New recipe a la Chris’ favorite website: TraegerGrills.com)

  • Smoked pork tenderloin w/ grilled zucchini and squash (Another new recipe, but I love when Chris cooks and I can be hands-off!)

  • Party Dip (making this into a ‘snack dinner’ – we’ll have some triscuits and cheese/salami, some veggies and fruit)

  • Slow Cooker Carnitas (tip: put meat on sheet pan after shredding and broil for a few mins so edges are crispy. Serving in tortillas with lettuce, tomato, refried beans, black beans, shredded cheese, avocado, red onion, and chipotle sauce. I am planning on freezing some of the meat for later meals)

  • Slow Cooker Meatballs and Gravy w/ mashed potatoes + green beans (New recipe and I’ve never thought of pairing meatballs with mashed potatoes but it sounds SO GOOD!)

  • Sheet Pan Dinner (I’ll either make it with couscous or barley, and this is loaded with veggies! Trying to make more of an effort to do a “meatless Mondays” situation… even though Chris has a hard time with it!)

  • Teriyaki Vegetable Stir-Fry (Swapping tempeh with super firm tofu because this store doesn’t have tempeh😣, and eating this over brown rice)

  • Slow Cooker Chicken Tikka Masala (We’re always on the hunt for authentic-tasting Indian dishes! So far we haven’t had a ton of luck, but hopefully this one is pretty flavorful! We bought some naan bread to go with this)
  • 4 days total of Leftovers/Fend for yourself! (I bought a frozen pizza, real whole chicken nuggets, burritos, sandwiches, and meals I’ve previously made and frozen for those nights when we don’t feel like cooking or don’t want a repeat meal)
  • 2 days total of Take out! (We love to support local restaurants and usually order out about once a week)

*Some of these meals may be used as leftovers throughout the week or as lunches. This is just our guideline- it usually never goes all according to plan!*

Snacks/Others: Larabars, veggies with dip, blueberries, watermelon, papaya, and mango. We have some other snacks in the pantry too- trail mix, jerky, nuts, etc.


8/16 Plan

  • Sloppy Joes w/ sweet potato hash (Chris is cooking this new recipe on the grill! I asked him to give me two recipes that he’ll cook the next two weeks on the grill and this was one… he actually gave me three! I’ll be doing the sides though)
  • Lentil Soup w/ spring salad (one of my favorites! Chris isn’t a huge fan of this one, so he might eat it once and do some leftovers/frozen items for the rest)
  • Chili con queso (making this into a ‘snack dinner’ – we’ll have some liverwurst and crackers (for me), triscuits and cheese/salami, some veggies)
  • Breakfast for Dinner (it’s been so long since we’ve done this- I always forget about this option. We’ll do bacon, eggs, and pancakes!)
  • Honey Sriracha Meatballs (with brown rice and carrots – this recipe is so good! We’ve made it a few times and it’s a winner)
  • 4 days total of Leftovers/Fend for yourself! (I bought a frozen pizza, real whole chicken nuggets, burritos, sandwiches, and meals I’ve previously made and frozen for those nights when we don’t feel like cooking or don’t want a repeat meal)
  • 2 days total of Take out! (We love to support local restaurants and usually order out about once a week)

Snacks/Others: ice cream, Larabars (coconut cream pie my fav, lemon, mint chocolate chip, cinnamon roll), veggies with dip, strawberries, bananas, chips. We have some other snacks in the pantry too- trail mix, jerky, nuts, etc.


8/2 Plan

  • Publix subs! (if you have a Publix around, you know how great these are! We opted for Italian and Ham/Turkey)
  • Rotisserie chicken (sides: we have some potato salad in the fridge, and I also got zucchini to saute and macaroni salad)
  • Beef Stroganoff (pairing it with cauliflower… always trying to get those vegetables in! I LOVE beef stroganoff and Chris is not a huge fan… so I only make it every once in a blue moon!)
  • Spinach + Bacon Quiche (one of our other favorites. I also like to add mushrooms! I always make 2 quiches. Sometimes I’ll freeze one after it’s cooked (divided into 4 and wrapped separately)- and sometimes we just eat two.
  • Egg drop soup with chicken fried rice (I love this egg drop soup recipe, and this is the first time we’re trying this fried rice recipe (which I’m adding chicken to)- it gets a good rating!)
  • 4 days total of Leftovers/Fend for yourself! (I bought a frozen pizza, real whole chicken nuggets, burritos, sandwiches, and meals I’ve previously made and frozen for those nights when we don’t feel like cooking or don’t want a repeat meal)
  • 2 days total of Take out! (We love to support local restaurants and usually order out about once a week)

Snacks/Others: watermelon, plums, cucumber + baby carrots w/ ranch dip, Larabars (chocolate chip + cookie dough, and trying the chocolate brownies).
We have some other snacks in the pantry too- trail mix, chips, nuts, etc.

We’ve been using these food storage containers for a year and they are a great size for us to pack a lunch.
